Here are my thoughts:
I personally think the initial public and federal reaction to Covid-19 was lackadaisical under-reaction, which quickly turned into panicked over-reaction in the last couple of days.
I also don't think a small group gathering like a gaming group is a significant risk.
That being said, here's my suggestion:
We skip this week while everyone figures out what their own comfort levels are, and how they are feeling health-wise. We can re-evaluate over the weekend. I'll also look into online options, like Roll20. Even if the rest of us meet in person next Wednesday, since Chrystal is actually feeling sick, she may need to remain self-quarantined, so we might use an online option for her*.
*I'm honestly not sure how to do that, though, over than having her on a speaker phone. I have neither the technical skills nor the equipment to set up a video conference for her.

I pretty much agree with you on the current level of (over)reaction. Though, I will admit, the constant media blitz on the horrors of all the things is increasing my concern in a way that is probably unnecessary. I'd be best served to just turn away from all the news sites I normally visit. I'm less worried about the interaction with the game group than I am about the tertiary interactions (getting gas and food and such) that I normally do on a gaming night. But, again, those are things I can mitigate. Seeing how things go this week and re-evaluating next week is probably a good idea, though.
On the purely virtual front, I own all of the FATE products on Roll20. That doesn't really mean much beyond the fact that I've got shareable rules references (limited value given the tweakage) and pre-made decks for stuff like the FATE Deck and FATE points (more useful in that there wouldn't need to be extra work done on that front). But, long story short, I've played with FATE on Roll20 before and can quickly set up the capability to do all the mechanical stuff if we need to for an interim solution. Roll20's chat client is ok... not great, but ok. I'd probably recommend Discord instead, but I think most of us already have discord.
On the people plus remote set up, that's a little more complicated, but I have a relatively modern laptop and if we have to have 1 player remote, I can probably set up something that would work. Microphone sensitivity is the big issue, but something as simple as a Skype call between my laptop and Chrystal's might be all we need. In my experience, having 1 remote player is... okay. It's not great, but as a temporary solution, it's workable. I've found that if more than 1 player has to be remote, then full virtual tends to work better.

Here's my current thinking:
Small gatherings are within CDC guidelines, and there's no curfew in NC (yet...), so we could meet this Wednesday at my place. Chrystal might still need to self-quarantine, since she is/was actually sick, but we might be able to figure out a remote hook-up for her (and by "we", I mean Nick, since I don't have the technical savvy or equipment, but he does).
Or...
We could practice social distancing, not worry about travel, gas, food, etc., and go Roll20. Now, if we go Roll20, we do run into a problem that my game, while based on Fate and for which Nick does have Roll20 resources and which I can get, it's not going to be directly compatible. Also, again, I'm not particularly technically savvy, I've played on Roll20 but never tried to run over Roll20, and trying to figure out the technical bits of running on Roll20 while also trying to figure out the technical bits of a half-built game system while also trying to run an actual game...would be a bid daunting for me.
So, another option...
I could run another chapter of the 5E campaign over Roll20. Especially if Movie Dave is going to be joining us, this would provide for some easy continuity. And, there are a LOT of 5E resources for Roll20. If we go this route, I'd probably run from a purchased 5E adventure, but do some narrative tweaks to integrate the adventure into the 13th Age Dragon Empire setting.
